School's OUT!

 Yesterday was a special day for Melbourne University final year medical student, no matter what rotations we were doing, it was our VERY last day of clinical! Last tutorial, last patient seen, last long case presentation done in non-examination settings, as medical students! 6 years of education, 6 years of hard-cramming, 6 years of stressful learning (and many more years to come), we are about to be let loose in various hospitals, with an extra Dr. in front of our names. Isn't it exciting?

I wonder if I'll miss all that, or will I look back and be thankful that it's ALL over? I guess time will tell.

Wondering why I wasn't out partying like a rock star? Well, it isn't quite all over yet, our final exams starts next week! Hello books!

Whenever I'm stressed out, I bake. (very 'Izzie Stevens' from Grey's Anatomy, I wish I have a body like her!)

Something about mixing and beating the batter that is sooooo therapeutic, not to mention the inviting aroma from the oven while baking.


The most delicious cake ever came out from my kitchen:


Hummingbird cake (my version)

Ingredients:
1 cup plain flour
1/2 cup self-raising flour
1/2 teaspoon bi-carb. soda
1/2 teaspoon cinnamon
1 cup firmly packed brown sugar
2 eggs
3/4 cup vegetable oil (or sunflower oil)
1 cup mashed banana
450g can crushed pineapple in syrup, drained
1/2 cup chopped walnuts

Yummy frosting:
100g Philly cream cheese
100g softened butter
1 cup icing sugar mixture
1 tsp Vanilla extract
1/2  chopped walnuts

Method:
1. Preheat oven to 170 degree

2. Grease a deep, 21cm round cake tin (square is fine too) and line base with baking paper.

3. Sift flour, soda and spices into a large bowl and stir in sugar and coconut.

4. Combine lightly beaten eggs and sunflower oil and add to dry ingredients.

5. Then add mashed banana and drained pineapple.

6. When well combined, spread mixture into cake tin and bake in moderate oven for about 1 hour.

7. Let cake stand for a few minutes before turning out onto rack to cool.

8. To make frosting, beat cream cheese, vanilla extract, icing sugar and butter with a mixer (electric, if you have it, I used a handmixer) until smooth. Spread on the cake after the cake cool down and sprinkle the walnuts on top!

Both Trev and I fell in love with the cake, and I also brought half of it to my clinic and it was well received!

Speaking of which, I'm missing the GP clinic already! I bought my 2 GPs respectively, a tie, a pair of cufflinks with koko black chocolate. Talk about being a suck up! I was very delighted that he wore the tie the very next day. They told me to keep in touch with them and be sure to inform them when I get into my GP training!


While I'm in a roll, here's another recipe! By popular demand, the dish which was very much enjoyed at my birthday party, and so simple to make!

Baked Pasta

Ingredients:
2 cup of pasta
1 cup cooked chicken pieces (I use thigh fillets)
1 cup bacon strips
1 cup sliced cup mushrooms
1 bottle of Leggo's pasta bake sauce in Sundried tomato and Garlic
1 cup of mozarella cheese

Method:
1. Preheat oven to 180 degree.

2. Boil the pasta with salt and olive oil added to water.

3. If using uncooked chicken, marinate chicken with some salt and pepper and fry the chicken in olive oil until slightly brown.

4. It depends how charred you like your bacon, I usually just throw it in to bake with everything, but you can pre-fry it.

5. Once the pasta is cooked, pour into a big baking dish and mixed with bacon, chicken and mushrooms. Pour the pasta sauce on top (add more water in the bottle to shake and pour the rest out, don't waste it!). Sprinkle the cheese on top.

6. Bake until it turns a lovely golden colour (about 20-30 mins)! Indulge!

I think one day you'll look back and miss all those uni days so I hope you made the most of it and it was very memorable for you. Good luck with the studying and singing gigs! :)

Do you have any recipe with a nice bunch of fresh fruits? I feel like eating it now especially as summer is almost here!

wOw! ur probably the most amazing girl i've ever seen! ur sOO smart(doing med), sOO pretty! and u can cook!!!!
I may have brains, and can look pretty if i dress up, but cooking is something I have yet to master! i LOVE baking too!!!and no matter how bad it turns out, i figured it'll always look/taste good with chocolate icing!:D
