BUSY past couple of days. And the weather has been really nice too and not humid or too hot.
YESTERDAY.................... My daycare girl and I went to Sams and Walmart to do some grocery shopping to stock up on things, now that my pantry challenge is up. (I did really well on it hardly buying anything for a month).
I shredded a HUGE zucchini and it made over 4 loaves of bread and had 3 cups of shredded zucchini left from that same zucchini that I bagged and froze for a future baking day.
I used the Better Homes and Garden bread recipe because it only calls for a 1/4 cup of oil.and is really easy. I add raisins and chocolate chips and walnuts-turned out yummy and the house smelled good.
Hubby is taking a loaf of it to work today and I gave some to Katie's boyfriend's family along with another zucchini from the garden. They are growing like crazy!
I made a sauteed zucchini with onions, garlic, and tomatoes to serve over rice the other night too. Very healthy!
I got my Red Cuisinart in the mail yesterday, very quick shipping and this was the one from William Sonoma with the free extra freezer bowl~which are red too. It's so pretty!!! hehe
So
I unpacked it right away so I could put the 2 freezer bowls in the
freezer to freezer for 24 hours. We will make 2 batches for the
weekend and I'll let you know which recipes I tried and how we liked
them.
I was at a few stores recently for other things, so while I was there I priced cream and half & half for when this did come in the mail. My big store, Woodmans, that I shop at regularly had quart of half & half for $1.48 and mixed with 2% milk in the recipe will be enough for 2 batches of ice cream. So not too bad in price. Walmart and couple other stores were .50-1.00 more in price for the quart. Now I'm on the lookout for any type of berry on clearance to bring home and freeze right away for future batches.
TODAY.............I have to go to the lab to get my blood drawn and tested again for my thryoid since my prescription is up.
The drs is right next door to a scrapbook store that my mom and I heard is having a 50% off sale on their sizzix stuff, so after I get my blood drawn we will go over there and see what the prices are compared to ebay prices.
I have my daycare girl today too and need to fit in some exercise.

It's been busy here the last couple days. Yesterday I cleaned out my freezer and took inventory. Also cleaned out, organized, relabeled some containers in my walk in pantry.
Found an awesome deal on produce Monday night when I ran to the store for a few things. They were marking down green & red bell peppers, bananas, tomatoes, and other produce.
I bought a big bag of bananas for .79cents, 20 bell peppers & 20 tomatoes for .10cents each. Normal price here is .50cents. I cut up a bunch to use for my Crockpot chicken fajitas and to have on hand for the week for salads and the rest got chopped and put into the freezer for future meals.
So it pays to look for those "mark down carts" at the front of the store and look for the clearance produce.
Our vegetable garden is doing well. So far we've had 8 big zucchinis, 2 bunches of broccoli, and we can see the tomatoes and hot peppers growing, they are just not done yet.
I gave a few zucchinis away and today I need to use a couple to make some zucchini breads. Hubby likes taking a treat to work to share.
Besides all that I need to exercise (been slacking lately), have my daycare girl for 8 hours, do some laundry and computer work.

Imagine.... an afternoon with nothing to do but make ice cream.....remember the good old days taking turns cranking ice cream? I do-----my parents loved ice cream as much as I did and they still do. Now you can make ice cream in record time and there are so many recipes to try out.
........So yesterday I decided and ordered the red Cuisinart and it came with an extra free freezer bowl, so I don't have to wait to freeze the bowl again for 24 hours before making a second batch. Can't wait to try it out!
I was talking to my sister Tammy in Texas and she had just pulled her machine out and made some ice cream since she hadn't used hers in awhile. So I started looking up recipes online and will send her some in the mail since she doesn't have internet right now. I wanted to find some no cook and some eggless ones.
If any of you try out some new ones that turn out good, please post them to your blogs.

Here's a NO COOK one that I want to try and you can change the fruit to whatever you have on hand:
Texas Peach Ice Cream
3 medium size Fully-ripened peaches, peeled, stoned and chopped (approximately 1-1/2
cups)
¼ cup plus 2 tablespoons Sugar
1-½ teaspoons Pure vanilla
2 cups Half-and-half, or 1-½ cups whole milk plus ½ cup heavy cream
In a bowl, using a potato masher or wooden spoon, break up the peaches with the sugar and
vanilla until coarsely mashed. Stir in the half and half. Taste and add more sugar if needed.
Pour the mixture into an ice cream maker and freeze according to manufacturer's directions.
When the ice cream is thickened and frozen, scrape it into a plastic container,
cover and freeze for at least 1 hour. Let it soften slightly in the refrigerator before serving.

HELLO!!!
We had a relaxing, no plans kind of weekend, which was nice because my back was bothering me this week.
Hubby and I finished watching Season 1 of 24 show, love it! I had never seen this show when it first came out, it's really good. I put Season 2 on hold for me at the library, waiting for it to come in.
My crown on my back bottom molar came off. I was chewing gum and hubby and I were in Menards store. I put it back on and it has stayed on all weekend and is not even wiggly and I ate normal foods just chewed on the other side. So I wondered if I should even bother with it since it seems fine now? I have to call the dentist this morning and see if he can squeeze me in today to get it glued back in place or however they do that. I hate going to the dentist! Any of you have that happen to you?
EDIT: Ok, called the dentist and the receptionist says he's out of town all week and if the crown is not bothering me, then I should be ok to wait till next week when he will cement it back on. I guess it makes a difference if this tooth had a root canal on it or not? I think it did, but I'm not for sure if I did or not, great memory huh!? haha

Today is my daycare girl's birthday. Emily turns 3 today. Her mom had her bday party for her Saturday but still had to work today, so I have her today for 10 hours. I will try to make it extra fun for her. I have a gift for her and my mom is bringing her over a gift (she made her a dress and colorbook bag) for her.
I need to exercise, do some laundry, dump trashes, mop the floors, clean out the freezer and dump some old stuff, update checkbook/write out some bills to mail, and write out a grocery shopping list/menu for the week.

It's definately summer-time here. Hot and Humid, today is supposed to get into the low 90's and be the hottest day so far.
Katie got her scores back from the AP English Exam she took 2 months ago. She was so excited----out of 5 points to pass, she got a 4. She wasn't expecting that high of a score.
Yay---Katie!! Now she has English/Lit credits under her belt for college that she won't have to take.
There are a few things that I've been wanting and looking for on Ebay or Craigs List because I don't want to pay full price for them. So I'll be browsing today online. Here's what I'm looking for:
Ice Cream Maker (anyone have a certain brand that is a really good one you can recommend?)
After hearing from my friend that she loves hers (thanks Michelle) and reading revie ws, it looks like the Cuisinart 1.5 qt ice cream maker is the one I am leaning towards.
ESPECIALLY because it is available in RED!!!! I have all red small appliances in my kitchen, so why not add this one to it too! haha
William Sonoma online has it on sale with a an extra free freezer bowl. So I'm still looking around for the best online deal before I decide to buy one.

I've been looking at the Stephanies 365 Day Crockpot blog and gleaned some recipes from her archives. I went back from when she started on January 1st and found the ones I've listed below in another blog that I want to try.
I am tagging that post if any of you want to check it out. You'll see it in the left hand module under TAGS. I will refer back to these recipes when making up a menu this next month.
I took one of hers and changed it quite a bit to make it mine and it was wonderful. It was very easy and everything was on hand in the pantry/freezer.
CROCKPOT BLACK BEAN SOUP
1 T. olive oil
couple handfuls of baby carrots, diced
couple handfuls of celery, diced
1 large onion, diced
2 T. minced garlic
1/2 tsp cayenne pepper or 1 tsp chili powder
1 tsp cumin
1/2 tsp garlic powder
1/4 tsp crushed red pepper flakes
1/2 tsp salt
1/4 tsp black pepper
2 - 15 oz cans drained black beans
2 chicken breasts, cooked & cut up( I used 2 leftover ones from the grill that were in the freezer)
1 - 15 oz can chicken broth
fill the empty 15 oz can with water 2 times
1 - 16 oz can of tomatoes with chiles
1 - 16 oz regular diced tomatoes with juice
1 - 15 oz drained can corn
1 can tomato paste
1 - 8 oz can tomato sauce
Saute cut up onions, carrots, celery, garlic, and spices in the skillet with olive oil for a few minutes. Put into crockpot and add the rest of the ingredients. Cook on low-med 6 hours.
Top each bowl of soup with crushed tortilla chips, shredded cheddar, and sour cream.
***MY NOTES:
Hubby and I both liked it but thought it needed more garlic. I added alot of minced garlic, next time I'll also add 1/2 tsp garlic powder also.
This will make a healthy lowfat lunch for me during the week since it made quite a bit. It's very filling and tasty!
