  • Atkins Diet Log #6

    Time on Atkins: 38 days
    Status:  In deep Ketosis - 80+

    Weight as of  7/16/08: 271.6 lbs.

    Today's Meals:  Lunch - Stewed goat with avocado salad
    Dinner - pan-fried catfish seasoned with old bay and dill.  broccoli and cauliflower stir fry with spam.

    Comments:

    Well it looks like the easy run is over.  Morgan commented that I couldn't keep losing weight at the rate I was going forever.  Perhaps its time for the long haul.  I'd like to make up any number of excuses, something is wrong with the scale, the ketosis testing strips are giving me false positives, maybe I ate some sugar and I didn't know it.  Fact of the matter is, no matter what, I've only managed to lose 2 pounds since last week, and that's discouraging.  Naturally i'm going to keep at it, but I'm definitely looking forward to exercising in a few weeks after I move.

    For those who aren't in the loop, I'm moving to Kew Gardens at the end of the month.  The current place was just too inconvenient for Morgan and our future roommate, so now we're at an express stop.  The place is larger, actually, its the same place I posted the video online of.  I'll have more details to give you about that later. 

    Anyhow, around the subway stop at the Kew Gardens is a Bally's Gym and a Tae Kwan Do school.  I"m thinking of joining one or the either.  On the one hand, the gym will provide a reliable place for me to work out regularly and lose calories.  But the Tae Kwan Do school will also provide me with a high impact workout that will tone my muscles and make me limber.  So i'm trying to decide which of the two to do.  Maybe the gym first and then Tae Kwan Do when i've lost a sufficient amount of weight?  What are your opinions folks?

    Hopeful Observations:

    Newly Tailored suit looks good.  Lost a lot of double chin.  down another notch on the belt!

  • Your Current Background...

    Like the background?  I title its "Your blue is showing through."

    Picture of a flowering bush in my neighborhood.  I've wandered my way into the "HDR" road of photography.  That is, I take 3 pictures of an object, all with different exposure times, to get different levels of light, then I combine the 3 images into in, to make a really detailed picture encompassing all its lightened glory.  Then I mess around with the tones in the image.  So, while that flower was originally purple/blue, its now mostly black and white with blue/purple highlights.

    I'll probably display some examples of it later on this week.  I've been spending a lot of time doing it lately, and Tina is complaining that i'm never around lately....so maybe i'll just spend some time teaching you folk about it instead running around queens taking pictures.

  • Atkins Diet Log #5

    Time on Atkins: 31 days
    Status:  In deep ketosis - 80+

    Weight as of 7/9/08:  273.6 lbs.

    Today's Meals:  Lunch - Roast Pork

    Dinner - Corned Beef, Tuna Fish, and boiled Cabbage

    Comments:

    Well on my to the 60's!!  I think the last time I weighed 260 I was a sophomore in college.  It just kind of blew by.

    I'm maintaining my diet pretty well.  Decided to play it safe from now on and simply avoid all things that purport to be low-carb, like that low-carb pasta.  When considering which products to buy, I simply go for the product that has the lowest carb.  I've been wrestling with the concept of sugar alcohols lately, and have determined that they do contribute to the carb count in a small way, regardless of what some people say, so no more sugar-free chocolate.

    nothing special to report as i haven't been cooking anything really special lately.  Even the corned beef was something we've always done for a while.  Although, Morgan made a really GREAT tuna salad last week, which we both enjoyed.  Sadly, he no longer recalls how he made it, and so the recipe is lost to us forever....=*(.  I have tried to duplicate what he does recall, but i'm missing something, or HE'S missing something.  That magic ingredient...

    Ok, he's managed to figure it out, here's the recipe:


    Morgan's Tuna Salad

    2 cans of white albacore tuna
    Mayo
    1 tbsp garlic powder
    1 tbsp Old Bay
    1 tsp dill
    1 tsp black pepper
    1/4 cup of shaved aged gouda cheese

    mix it up!


    I'll try it sometime this week and see if its for real.  Have to finish my previous failures first.  I like adding some chili or cayenne pepper to it too to give it a kick.

    Oh, on another note, fine dining for those on Atkins is very difficult, considering how often chefs like to mix and match their flavors, you really have to be on the look out.  Going straight protein dishes is not necessarily safe.  Fish however, is usually on the safe side, as few people mess with fish given how easy it is to screw it up.

    Hopeful Observations:  My suit is a size too big!  must get it tailored.  Rings falling off hands.  Got a new smaller belt!

  • Atkins Diet Log #4

    Time on Atkins:  24 days
    Status:  Moderate Ketosis - 40

    Weight as of 7/2/08:  277.8 lbs.

    Today's Meals: 

    Lunch:  Roast Chicken - 1/2

    Dinner:  Herbed chicken served with alfredo sauce over "low-carb" pasta.
    Stir-fried broccoli with garlic powder.

    Comments:

    I attribute my weakening ketosis to the low-carb pasta that Morgan insisted was safe for me to eat.  My philosophy on Atkins at the moment is "the lower the carb, the better." and "If i'm going to have carbs, put it in my vegetables."  The herb chicken was made with my own blend of spices and seasonings.


    Recipe:

    Hamilton's Herb Chicken

    Ingredients:
    5 chicken thighs or breasts, thinned out
    1 tsp Tarragon
    1 tsp Oregano
    1 tsp Basil Leaves
    1 tsp dried parsley
    1 tsp chili powder
    1 tsp dried dill
    1 tsp garlic powder
    1 tsp black pepper
    1 tbsp kosher salt
    1/2 cup olive oil
    1/4 lemon juice

    Pour the olive oil onto the chicken, then add spices, and lemon juice.  Massage the spices into the chicken in a bowl and evenly distribute, then let sit for 10-20 minutes.  Pan-fry evenly on both sides in olive oil.


    For last night's dinner, the sauce came out of the bottle, I simply let it simmer for the last 5 minutes of cooking.  Prepped chicken, and while frying, started on the broccoli, which were dusted liberally with kosher salt and garlic powder.  When done frying the chicken, sliced, placed over bed of pasta, then covered in sauce.  Added a slice of provolone cheese on top for some extra cheesiness.

    I have lunch down pretty good.  Usually its salad, or some form of low-carb altered meal.  I think I will stay out of the Chinese place for a while as its hard to control what they put into the food, but salad does get boring after a while.  I must attempt to ignore Morgan's temptations, his belief in low-carb substitutes in foods that one would normally avoid.  My weight loss thus far is ok, but I really feel I could be making better progress.  I will be moving at the end of this month to an area with a Bally's gym.  I believe I will join the gym and go on a daily basis to facilitate the weight loss.  Morgan never combined his low-carb diet with regular exercise according to him, and he's interested in seeing what kind of results that nets, I am too.

    Hopeful Observations:
    My jewelry is hanging loose on me.  Rings are sliding around my fingers, and my pendant is hanging lower than it ever used to.

  • Photography

    Just a notice for all of you:

    My father gave me his old Nikon D50 DSLR for my trip to California/Mexico, since he got himself a new one.  So all photographs you see on this page starting from February on, are taken by me.  Anyone wanting to see the California/Mexico pics can check them out on my facebook albums. 

    I've always been a fan of photography, started taking classes for it in HKIS, but over the years i've forgotten a great deal.  So i'm slowly relearning.  Part of my activities these days will be scheduling trips to go out and do some shooting.  So far i'm working with still life and light effects.  I may or may not showcase some of that, but some pictures i'm particularly happy with will get posted as backgrounds here on xanga.  If anyone wants a copy of one of them, let me know.
