| Awesome low cal Apple Cobbler
Ingredients:
3/4 cup unprocessed bran 2 egg whites 3 tsp butter buds 1 apple 1 tsp oatmeal 2 tbsp cinnamon 8 tsp (or to taste) splenda Preparation:
Cut the apple in half, chop one half up into small pieces about 1/16 of an inch in size. Slice the other half into fine thin wafers (as thin as you can). While you're doing that, put the oatmeal in the microwave on high with 1/4 a cup of water in a deep dish until it becomes a sticky paste. Mix the egg whites into the bran. Put in half of the butter buds and some of the splenda. Mix in the finely chopped apples and then the oatmeal paste. Pack the mixture firmly into a 7" pie pan. Take the apple wafers and dip them into the cinnamon and sprinkle the rest of the splenda. Arrange the apples into a fan on top of the packed bran mixture. Bake at 350 until the apples shrivel and the edges are slightly brown.

| French Toast (Filling with a touch of sweetness)
Ingredients:
1 egg white 1 tsp vanilla extract (with no alcohol) 1/4 tsp splenda cooking spray 1 slice low calorie bread cinnamon
Preparation:
Mix egg white, vanilla extract and splenda in a flat bottom bowl. Spray skillet with cooking spray. Dip bread in the egg mixture. Place in skillet. Cook both sides. Sprinkle with cinnamon to taste when done.

| Mexican style Omelet
Ingredients:
2 egg whites
2 tbsp salsa
1 teaspoon low fat or tofu cheese
Preparation:
Mix together the egg whites, cheese, and salsa. Place in a microwave safe bowl. Microwave on high for 90 seconds.

| Turnip & Sweet Potato Frittata 2 spring onions 1 red capsicum 1 turnip, diced 1 sweet potato, diced 1/2 cup corn kernels 8 egg whites 1/4 cup low-fat edam cheese 1/3 cup skim milk 1 tbsp chopped fresh parsley black pepper
Saute onion, capsicum, turnip, potato and corn in a non-stick frypan for 1-2 minutes. Lightly whisk together eggs, cheese, milk, parsley and pepper and pour over vegetables. Cook over low heat for 4-5 minutes or until underside is golden. Place pan under a hot grill and cook surface until set and golden.
serves 4 150 calories 4 grams fat
Serve this with a salad with fat free dressing. It will look like a big meal to anyone watching you eat but won't be more than 200 calories | | |
