Getting to Know Chef Eats..


A Quick Bio

Now that I've been featured on Xanga's front page a couple of times now. (thanks to whoever was responsible for that) And with a bunch of new readers asking me who I am, where do I cook, what do I cook... etc.. well here we go.. the guy who's behind "Chef Eats"..

My name is Allen. I graduated from the Delgado Culinary Apprenticeship (3 year program) in New Orleans top of my class. Recognized by the L'Academie Brillat-Savarin and awarded the "Jeune Professional Award".  I've competed in the American Culinary Federation N.O. Culinary Classic and won an "ACF Silver Medal". I'm currently a "part-time" Chef at a country club in New Orleans. I was offered positions at Cuvee and Restaurant August. But due to my dad's untimely death last year, I assumed other responsibilities and I could not take the jobs.

I love cooking.. I am truly passionate about the craft and the art. If I could be a just a line cook at really good restaurant for the rest of my life, that would probably do it for me. (hopefully it's a restaurtant on a beach somewhere..lol) I don't need the money or the fame. As long as I'm free to utilize my skills & obtain and share knowledge.. this would be ideal.

Something I've created..

Orange Chocolate Mousse..

It's an Orange-scented Chocolate Mousse! I made this for my dessert class a while back in culinary school. They teach you to utilize every last bit of your ingredients.. So I extracted the juice of 2 oranges.. used the peel of one to make a couple of roses for garnish. The other orange was hollowed out and zested. It was then put into the freezer to keep it's shape and keep the mousse cold later on. I took the strips of zest and caramelized it in some simple syrup to use it as a topping. And for the mousse, I made it with my normal recipe and added the orange juice to it. That's it.. I believe my pastry chef gave me a 113 out of 115, he said something about "dirty work station"?.. uncalled for, he has a problem giving perfect grades.. damn it.. lol

what a unique twist to your blog. why hello there allen! nice to meet ya! you should post a pseudo-pic of yourself. like your face half hidden behind a foodie book or something. like wilson! aww shucks... i remember when allen was first in culinary school. how cute! now he's a big time hot shot. anyways, i'm hungry.

p.s. READER SUGGESTION! can you do an entry on blending drinks? like fruit smoothies? i like it easy! non-alcoholic please. i want my liver to recover for now.

That desert is so amazing! You did that, all with your hands. It's so insane! I wish I could learn how to make those peel roses. Maybe a how to is in the future? And I have a teacher that refuses to give 100s, and only gives 99s. He means well. :p

Allen, your orange chocolate mousse looks amazing! I would give you 115 if i can get a taste of it =P. I love desserts. I do have a question... recently I tried to come up with a Strawberry Short w/ a Twist and the twist was the lime zest and lime juice, it doesn't blend well w/ the strawberries and vanilla cake, should I use lemon, orange or grapefruit to give it a little tangy taste to the frosting?

Hey thar ! Tis nice to get to know the chef behind 'chef eats' ;)  thats awesome you went to culinary school and did so well to boot! from what i've gathered just reading some industry books here and there culinary school/and just being a chef period is A LOT of hard hard work.  And indeed the love for good food makes it worth it!  Goodluck in realizing your dream restaurant, cozy and quaint by the sea!  Ahem they need some more of those in san diegooooo :)

If it's like the culinary schools over here (the good ones at least)npretty much none of the teachers will give a perfect grade. Master Chef (my man) managed to get a distinction once (had to have a 98% grade average). He was also a smart ass though, and got good grades by switching his dish with the teachers. Then when teacher picked it apart, and dais that the one at her desk was how it should be, he said "good, cause this one's yours, and that's mine". I think she wanted to throw him out the window!! hehe. Your presetation is absolutely fantastic.

oh my goodness, that looks soo good...and u created that? u must be really good...and i saw the feature on the vietnamese noodles as well as Patdhai (not sure how u spell it) and I crave for it so much now..went to Bangkok recently and goodness, i couldn't stop myself from having padhai like everyday...but when i got back to m'sia, coudn't really find it here cause most people don't really like it i suppose...too bad for them...
