What's Cookin' in Copper's Kitchen This Week
We missed a couple of dishes on last week's menu, so I'm recycling one of them over to this week. Poor Will, he was really looking forward to spaghetti last week. It's one of his favorite meals! I promised him we'd carry it over to this week.
The only new-to-me recipe this week will be Thursday evening when we make up a batch of Ree's Apple Dumplings. The Mountain Dew lover in the house even graciously submitted the necessary can of that particular beverage to the cause. Corin & Rob and the grandbabies will be here, so it will be fun to have these with them. It'll keep us from eating the entire batch by ourselves, too! I do have a couple of recipes to share with you this week, though. Those are marked with an * in the menu below and I'll share them later this week, probably late in the day that they are prepared. MONDAY
Breakfast: Waffles (made by Copper!)
Lunch: Homemade Tomato Soup, french bread (from our freezer stash)
Dinner: Chicken Enchiladas, Green Salad (Dani will make this for she and the boys. Copper and I are headed to town for the rare treat of meeting friends for dinner.)TUESDAY:
Breakfast: Bacon, Eggs and Toast
Lunch: Left over Enchiladas, Green Salad
Dinner: Spaghetti, Garlic Bread (made from another freezer stash loaf of french bread), Green SaladWEDNESDAY:
Breakfast: Cereal (Only once this week, which GREATLY assists the budget!)
Lunch: Black Bean Tostadas, green salad
Dinner: Copper's Grilled Pork Roast*, Herb Roasted Potatoes and Carrots, Green SaladTHURSDAY:
Breakfast: Scottish Oatmeal
Lunch: Grilled Cheese Sandwiches, Fruit
Dinner: Salisbury Steaks, Fried Potatoes*, Green Salad (Corin, Rob and the kids will be here for dinner!)
Dessert: Those apple dumplings!!FRIDAY:
Breakfast: Pancakes
Lunch: Cheese Quesadillas, applesauce
Dinner: Sub Sandwiches, chipsSATURDAY:
Breakfast: Scrambled eggs with cheese & bacon, Six Week Raisin Bran Muffins (from the freezer stash)
Lunch: Chef Dani's Choice
Dinner: NachosSUNDAY:
Breakfast: Dani's Wonderful Cinnabon Cinnamon Rolls
Easter Dinner: Glazed Ham, Potatoes Supreme, Cherry Pie Jello, Green Salad, Rolls & Butter - Cheesecake and lots of treatsGod bless you as you look well to the ways of your household!

One day this one is going to go through your
blog recipe hunting. All of yours are delicious.
I saw those apple dumplings on her blog and have wanted to make them. But I keep forgetting to buy Mt. Dew (it's not something we drink). They sure do look delicious. Thanks for the menu ideas and links to recipes!

The apple dumplings are absolutely DELICIOUS. I neighther like mt. dew, apple pie or dumplings (I like my apples natural), but made this for my family. My husband shares my feelings about apples, but the mt. dew caught his attention. We all loved them. You might want to make 2 pans with Corin and her family comming over ; ) It would be a shame to not have enough.

I'm with Will...Spaghetti is the best! I could eat it every night. And we won't be eating the corned beef and cabbage either. Chris nor I like the stuff. The Ree's apple dumplings look so yummy, of course all of her food looks and tastes delicious. I've tried a few.

Hi there! I've been a lurker for quite some time and you have inspired me many times to be a better wife and mother. Thanks! Wanted to let you know that those apple dumplings have become a favorite here in our home. Even my husband, who doesn't like apples when peaches are so much better, loves them. In fact, we had them for desert tonight! Hope you enjoy them as much as we do.
