Bye, Bye Hair

So I did it. I got like six inches of my hair cut off today. I think I like it but they put way too much product in it. I will post a picture soon. I don't think it is really drastic but it is different.

Tonight is the big night. The Artist's Cafe. I am really excited about it. We set up last night and I am quite pleased with my pieces that I did for this year's show. It would be pretty cool if I sold I painting, but I am not getting my hopes up.

Another exciting note is I have been doing Pilates every day since Monday (except Thursday) and have been lifting weights and I weighed myself this morning and let's just say my determination as paid off. One of my favorite healthy I.C. meals is:

Romaine Lettuce
Cut up carrots
Feta cheese

Dressing:
1/4 C cottage cheese
1/2 TBSP Olive Oil
Onion powder
Garlic powder
Oregano
Basil

Yum...

And because I am off I went to rent movies at my local video store. I was really surprised, but not really. Because of Redbox and Netflix all of the videos around have been closing. I wasn't that upset because I got out with nine DVDs and four VHS tapes for 32.00. Let's just say anyone who knows me knows I love movies and I couldn't pass this deal up.

Anyway, I had better close this. I am watching Gossip Girl and I need to make rice krispies for tonight.

I found a yummy dressing recipe for you that you could make substitutions on...I'll send it to you.

It's close, now that I look at it. If you can have chicken broth you could substitute that for the lemon juice. Obviously, no shallots or pepper, but it looks yummy! I would use less OO, though. That's A LOT!

Greek Vinaigrette:
1 shallot, diced
1/2 cup fresh lemon juice
1/4 cup feta cheese, crumbled
1/2 teaspoon dried oregano
1 teaspoon salt
Freshly ground pepper
1 1/2 cups extra-virgin olive oil

Put the shallot into the bowl of a food processor and pulse until well chopped. Add the lemon juice, feta, oregano, salt and pepper and pulse again to combine. With the processor running, add the oil in a steady stream. Pour into a small pitcher and set aside.

Yield: 2 cups

Love the new hair, now that I see it down. You should see the new dress I got on clearance at Target. You would be proud. Also, we aren't switching small group for Mother's day, so we will not have it the weekend that mom is here. Let me know if you'd rather do lunch Saturday and go shopping or do dinner Saturday or Sunday night. We're up for anything, just let me know. We can go somewhere or I can make a roast or pork or something.

Um...IDK. I am confused. How about lunch on Saturday and shopping then we can meet somewhere Sunday night for dinner (like Tumbleweed) and take mom along the riverfront. I am not sure she has ever been and it is pretty cool. I know you and Shane wanted to go on a "date" while she was here so maybe you guys could do that Saturday night. I will probably go home before dinner so that might work...or whatever. We can talk about it.

I want grilled cheese. I had a piece of one yesterday at Meijer so I made one at like 12:00 last night. I think I am going to have one for lunch.

I think we need to pick one or the other. I don't think mom wants to run the whole weekend. Of course, if we did dinner here on Sunday, that would be better. How does that sound? Shopping and lunch on Saturday and dinner here on Sunday night? I'll ask mom too, since she will be getting in on Sat. a.m.
