crab salad, so fabu

omg, I just made this, and it's heaven:

1 package crab pieces (mine is the blend of real crab w/ the white pollock imitation crab).  I think it's 16 oz.
5 small baby carrots, organic if possible, chopped
1/4 medium onion, organic, chopped
1/2 organic portabella/o mushroom
approx 1/3 cup pickle relish
approx 1/4 cup miracle whip
a sprinkling of shredded cheese (I used colby jack, a little less than a palmful)
six spanish olives, chopped
one sprig fresh rosemary (use sparingly)
fresh ground pepper and sea salt to taste

Stir all that up.  The salad dressing and relish should be so light that they only serve to moisten the salad ingredients.  You don't want this turning goopy and white, so be sparing w/ the mayo/whip and add more later if you need to.

If I had some organic whole wheat pita pockets, I would eat this with some of the baby buttercrunch lettuce out of my fantastic garden.  It would be a terrific sandwich on the go, or something to take on a picnic.

In other food news, I had fish tacos last night.  I must be on a fish kick.  Go, flexitarianism!  I consider the fish tacos to be a triumph over last Monday night's banana burrito (don't ask).

In even more food news, I have been using RiceOTein to get added protein into my diet.  I'm not going to lie to you, it tastes horrible.  However, if I mix it into my coffee, I can sorta fool myself into believing it's a mocha.  Even better, it goes into milk and sorta makes choc. milk (with even more protein).  Riceotein is totally organic and consists of organic brown rice protein, organic cocoa powder, and organic stevia.

I know the word of this post is "organic," but, honestly, I think it has improved not only my overall health, but specifically my immune system and mental health.

So there you go.

That sounds really good! I'll have to try it! I'm always looking for quick and tasty, but healthy meals. I've been trying really hard to get healthier, it's tough work! You've inspired me to share a recipe for stuffed tomatoes that I came up with a few months ago. :)
