thoughts on thanksgiving

I overheard a guy saying this the other day...

"Everyone complains about America being the fattest nation, yet we dedicate a whole day to stuffing ourselves."

I thought it was funny!

Recently the kitchen has been a place where I usually don't feel like a failure.  Every year I find myself loving to cook more and more and this year proves true as well.  Cooking has become really therapeutic to me and such a great distraction from the struggles I've been going through.

I've started this unofficial goal of trying a new recipe each weekend and this weekend I decided to make sweet potato casserole.  My dad and stepmom came down this week and we spent Thanksgiving in Charleston so we went out to eat for Thanksgiving.  Because we went out, we didn't have as many leftovers as I am used to from previous Thanksgivings so I decided to make myself my own leftovers!  Sweet potatoes are one of my favorite Thanksgiving foods so I decided to make them.

I got everything ready and disaster struck!  The recipe said to grease a medium sized pan.  So I did.  Then I cut up the sweet potatoes and realized that the pan would definitely be to small.  Then I was boiling the sweet potatoes in a pot that was too small for them so I transferred them to a different pot which was still too small.  While they were boiling, I greased a large pan and finished following the recipe.  Once everything was mixed, I put it in the new pan only to find that pan was too big.  So I found another pan and it was too small, but I just dealt with it.  I made quite a mess transferring the sweet potatoes and this syrup stuff from one pan to another.  So I put it in the oven and baked it at 375 for 30 minutes since that was what the directions said.  After 30 minutes, I didn't feel like they were done.  I cooked them another 10 minutes and they still didn't seem like they were done, but I honestly don't know what they were supposed to be like.  I was getting hungry to ate them the way there were and they were pretty good, but it was a little stressful.  I definitely have leftovers though!

2 more weeks till i get to go home!!!!!!!!!!!  PTL!!!

well I did it!!!!!!!!!!!  .8 inch margins and 11pt font, but the most important things that have occurred in my almost 24 years are now contained in 2 pages.  thanks Lord!

Currently Listening
Turn Around
By Jonny Lang
Anything's Possible
see related

Last week I heard this song and on the radio and it made me cry.  It totally spoke to my heart about joining staff.  I decided that it would be my "joining staff theme song"!  I ordered the CD a few days later and it came on Thursday.  It's awesome!!!  The lyrics to this song seem kinda cliche when you just read them, but when you hear the song and the gospel choir, it's powerful!!!

I remember in the days of old – doesn’t seem that long ago

It was, “Jonny, you won’t be nothin’ unless you do what you’re told”

“Study medicine or study law, but please put away that guitar”

“The best you’ll be is a local star at the local bar.”

But I went and did it anyway family helping all the way

Now I’m here today 5 records later just so you can hear me say

Don’t let ‘em tell you can’t be anything you wanna be

Don’t be deceived – anything’s possible

If you just believe, then you will succeed

It might not be easy – but anything’s possible

What if old Ben Franklin would've been frightened by lightning

If he would've stayed inside then we'd still be in the dark.

Martin Luther King did some beautiful things

All because he had a dream just like you and me.

Don’t let ‘em tell you can’t be anything you wanna be

Don’t be deceived – anything’s possible

If you just believe, then you will succeed

It might not be easy

Don't ya know there's gonna be sweat and some tears, some hard years

Best believe there'll be hurt and some pain, expect some rain

But you're gonna make it if you try

To keep your eyes on the prize - you can take it

Might have to work it, but it'll gonna be worth it

Repeat Chorus
