  • EZ Peachy Angel Cake

    1 box angel food cake mix
    1 20-oz. can peaches

    Set oven to 350 degrees.

    Drain peaches juice into large mixing bowl;  set aside.

    Place peaches in blender and chop until there are no large pieces.

    Add chopped peaches and cake mix to the peaches juice.

    Stir until well-blended.

    Pour mixture into greased 9x13 pan.

    Bake for 30 minutes until top is golden color - - shut off oven and leave pan in oven for 3 minutes.

    Remove from oven and let cool.
  • Ham & Cheese Stuffed Chicken Breasts

    4 boneless skinless chicken breasts, tenderized until thin
    8 slices ham, thinly sliced
    4 portions of string cheese, sliced lengthwise in half
    1/4 c garlic croutons, crushed
    Egg white

    Set oven to 375 degrees.

    Spray 9x13 glass pan with cooking spray.

    Place 2 slices of ham and 2 halves of cheese at one end of each breast.

    Roll while making sure the sides are enclosed as well. 

    Place toothpick to secure.

    Brush top of chicken with egg white;  dip into crouton mixture.

    Place into pan and bake for 40 minutes.
  • Richie Rich Peanut Butter Candy

    2 cup sugar
    2 T corn syrup
    3/4 cup milk
    1/8 teas. salt
    1/3 cup crunchy peanut butter
    1 teas. vanilla
    Candy thermometer

    Place sugar, corn syrup, milk, and salt into large saucepan, cooking on medium/low heat.

    When mixture reaches 234 degrees on candy thermometer, remove from stove.

    Add peanut butter and vanilla and stir.

    Place into a separate bowl and mix until concoction thickens.

    Pour into buttered 8x8 pan.

    Refrigerate.

  • Melissa's Glazed Lemon Cake

     

    1 Box Lemon Cake Mix

    1 Box Lemon Jell-O Instant Pudding

    ¾ Cup Water

    ¾ Cup Oil

     

    Mix the above ingredients together.

    Then add 4 eggs, one at a time and beat.

    Bake in a greased pan at 325 degrees for 40 minutes.

     

    While cake is still hot, puncture with fork, and pour the following glaze recipe over the hot cake.

     

    Glaze:

    2 Tblsp. Melted Butter

    1/3 Cup Lemon Juice

    3Tblsp. Water

    2 Cups Powdered Sugar


    (*Melissa uses fresh lemon juice and also adds lemon rind to the cake batter, but you don't have to "go fresh")

  • Honey Mustard Baked Chicken

    2 chicken breasts, defrosted
    2 T. butter or margarine
    1/2 cup honey
    1/2 teas. salt
    1 T. prepared mustard

    Preheat oven to 325 degrees.

    Place the chicken in a greased square baking pan.

    Bake for 30 minutes.

    In a small saucepan, combine butter, honey, salt, and mustard.

    Cook and stir over low heat until well-blended and thoroughly heated.

    Once chicken done baking, pour mixture over chicken.

    Bake for 30-35 minutes additional.
