That's where I usually blog now. I sometimes blog on friendster too...

Why do I feel dumb and fugly? My self-esteem issues are annoying...

Want people to give me answers instead of me searching for it myself...tell me if I'm good for psychology, because I don't want to do it if I'm not...I'm not that in love with psychology. I love singing...and I would do that even if I suck...Though I would really really hope to be good at it...I would still do it even if I suck...Not psychology though...I don't want to be in it, pretend to be good at it (or have people think that), if I'm actually no good for it...

I'm just a weak sauce...to steal pheebu's description of himself...=P...

Why do I love pheebu like I do? it's such a mystery...I don't understand it anymore...I hate that. I wanted to be always clear about why I like/love someone. Why are there so many questions and not enough answers to feel like I'm here on solid ground?

What are we?

In Swahili, Moja means "one". Our name represents our singular focus in producing premium quality in each and every bag of our coffee beans.

 

We are coffee brewers committed to bringing exquisite coffee to our customers one cup at a time. We do this by sourcing the best single-origin coffee beans from all over the world and roasting them to perfection at our European-inspired roasting facilities. 

 

Each pack of coffee beans you purchase from Moja Coffee has been cupped and tasted to match the standard and quality assurance that we stand for. The roasting occurs within a day of delivery to ensure the freshest tasting coffee you can find. We take pride in the incredible amount of attention and dedication we put into every single detail of this process.

 

Who are we?

Moja Coffee signifies the love for fresh gourmet coffee.

 

Driven to establish coffee as a delicacy, a family of aspiring gourmands from British Columbia, Canada founded Moja. Nowadays, Doug handles the business end of the Moja enterprise while Andrew overlooks the roasting operations at Moja, making sure that the promise of premium quality is carried out.

 

Our Vancouver-based specialty coffee roasting company is supported by the strengths in the individual backgrounds of our founders. Doug has spent many years in the food and beverage industry, while Andrew grew up with a heritage in East-African influences. In addition to an inherent understanding of the coffee industry, they have also done extensive research in places like Italy and Kenya to learn the art of roasting and picking out the finest bean crops being harvested across the globe.

Certified Organic Fair Trade Sumatra (467C)

 

From the finest growing region of Indonesia, Mandheling, our Sumatran coffee is full bodied with low acidity.  Mixing tones of cocoa with a classic rich aroma, most experts consider this coffee to be one of the world¡¯s most distinctive.

Certified Organic Timor (609C)

 

Located east of Java in the Indonesian archipelago, much of Timor¡¯s coffees industry was destroyed by war in 1999.  However, with the help of the international community, East Timor is now providing us with one of the great coffees from the region.  Dark roasted, this coffee has all the body of its Sumatran cousin, with hints of fruit and spice in its finish.

 

Certified Organic Guatemala (644C)

 

From the highlands of Guatemala, comes Mother Nature¡¯s mocha!  Rich, full flavored with a touch of spice and cocoa, this coffee represents all that is great about Central American beans.  We source this coffee because it is processed with passion and precision.  The farmers in the region pride themselves on respecting the land in which the coffee is grown.  We think that¡¯s pretty cool!

 

Certified Organic Costa Rica (5773C)

 

Located near the Panama border, above lush jungle, the mountain region of Costa Rica known as ¡°Las Tablas¡± produces one of our favorite coffees.   Here the land is in perfect balance, as this coffee shares the soil with organic vegetable gardens as well as Erythrina and Leguminous trees.  The result: a perfectly balanced roast with medium acidity and a clean sweet aftertaste. 

 

Organic Peru (578C)

 

This certified organic coffee comes from lofty heights.  Known as ¡°Norte¡±, the northern district of Peru is one of the highest growing regions on the globe.  This well balanced coffee showcases a medium body with a touch of spice.   

 

Certified Organic Nicaragua (2C)

 

Sourced from small cooperatives near the town of Jinotega, our Nicaraguan coffee is one of the most complex coffees from Central America.  Full bodied, with a nutty aroma, this coffee shows a character unique to this spectacular region.  For years, Europeans have known the value of Nicaraguan coffee and we are convinced it will be one of your favorites as well.

 

Kenya AA (145C)

 

Identified by its dry texture and berry-like flavor, Kenya AA coffee is renowned throughout the world.  Grown at high altitude, this East African coffee shows a pronounced acidity with wine-like finishing tones.  At Moja coffee we work with contacts in Kenya to secure the best quality product available in the marketplace.

 

Panama (454g & 5lb valve packs) 
An affordable choice to drinking Kenyan coffee. This variety cups very close to its African counterpart, but has more cocoa tones for a smoother finish.

 

Organic Columbian (454g & 5lb valve packs)
In our opinion one the most balanced (not to mention underrated) coffees on the globe.  It has a rich aroma and a smooth finish roasted to a medium color.

 

 

Espresso

 

Definition: A strong coffee brewed by forcing hot water under high pressure through a bed of finely grounded, compacted coffee at high pressures. When brewed properly, it is topped with a dark golden cream, called crema.

 

Keeping in mind the Italian roots and community-forming culture of the espresso drink, we currently offer three original Moja blends for espresso lovers.

 

Certified Organic Decaf Espresso (285C)

 

We have a very simple approach when it comes to decaffeinated coffees: It has to be a  Swiss Water Process and it can¡¯t taste like decaf.  At Moja we carry only one decaf - our decaf espresso blend.  All the flavor of regular espresso with no caffeine.  A variety of Indonesian beans are combined to give you a full bodied coffee, with a sweet caramel finish.

 

Certified Organic Espresso ¡°Imara¡± (453C)

 

Our pride and joy, this espresso has been sourced from small organic estate farms and co-ops around the world.  To create a great espresso, everything has to be in balance.  From roasting to packaging, this product has been subjected to intense testing to make sure it delivers a consistently great taste.  Our Certified Organic Espresso features a smooth full body, balanced with hints of cocoa.  Its long lasting caramel finish has become a favorite at the finest coffee houses and restaurants throughout the area.

 

Espresso ¡°Bora¡± (877C)

 

Tested in Italy¡­proven in Canada!  Bora is Moja¡¯s homage to traditional espresso culture.  From the Swahili word meaning great, Bora is a complex blend which showcases our finest work.  This barista quality espresso exhibits all the characteristics associated with a great shot of espresso.  Hints of chocoate and caramel are the finishing notes in this medium bodied blend.  The thick copper crema will amaze you and the overall balance and taste will inspire you.  Enjoy!

 

Brewing 101 - How to brew a proper cup of coffee

 

So you have gourmet coffee beans. What now?

  1. For drip machines, use 2 tablespoons of ground coffee per 6-8 ounces of filtered water. Always begin with cold water to brew your coffee.
  2. For French press, we recommend a coarse grind. Use trial and error to adjust the grind size and brewing time to your personal taste and your equipment.
  3. As a general rule, longer brewing times should be paired with larger grind size and shorter brewing times should be paired with smaller grind size.
  4. To maintain freshness after opening, continue to store your beans in the re-sealable twist-shut Moja package at room temperature. Resist the urge to follow that popular myth of storing your coffee in the freezer or refrigerator!
  5. When possible, never grind the entire bag in advance.  Pre-grinding your coffee will contribute to its aging process and will limit its shelf life.   Grind only what you need when you need it, and enjoy the full potential of your coffee!
  6. Be diligent at keeping your equipment clean: After each use, be sure to rinse the brewer with clean hot water to remove residue. If you use soap, make sure all soap residues are removed
  7. Spare a little bit of money for a well-made filter to clarify your coffee and separate the extract from the coffee grounds.
  8. Your coffee equipment controls the coffee's contact with water. So remember to pay attention to the length of the brew, the temperature of the water, and the amount of mixing (turbulence) going on. Ask the manufacturer to help you with the required calibration and maintenance.
  9. There is always room to learn more about coffee and brewing! For example, there are six basic methods of brewing: Steeping, Decoction, Percolation, Drip Filtration, Vacuum Filtration, and Pressurized Infusion. Pick up a book or check out some websites for more information.
