  • Another day...

    ... another dollar? Sure!

    As I sit here at work at 2:39 I think about how sleepy I am, and how I would like to go home... Blah.Woke up this morning, went to the gym, cooked a breakfast of turkey sausages and egg. It was awesome!!

    Yesterday I had a great zucchini and spinach soup, home made! I forgot how much I miss cooking. :) I want to make all sorts of tasty things with fancy cheeses and sausages. But budget cooking will again sink in soon, lol.

    Week 1 of the C25K program down, looked like this:

    Sun - 30 min run/walk, 2 miles
    Mon - Break
    Tue - 30 min run/walk, 2 miles
    Wed - 40 min brisk walk, 2 miles
    Thur - 30 min run/walk, 2 miles
    Fri - 40 min brisk walk, 2 miles
    Sat -Break

    Eventually the Sun/Tue/Thur runs will be 5K! (In 9 weeks!) So the ratio of running to walking shifts from more running to less walking over the 9 weeks and all running by the 9th week. :) The 2 miles "in-between day" walks are just good for waking up, blood running, feeling good.  From now on Mondays will be a 40 min walk also- not a break, lol. Saturday will be my only day off. I can't wait to start the W2 C25K runs/walks.

    Tonight I'm having a salad with ham and the rest of my zucchini and spinach soup. Maybe some sugar-free jello for desert. We're going out tonight (to Hi5) so that should be A LOT of fun. I'll need a nap before we go. Doors open at 10. Eep, gotta get up and run at 6!

    I've also decided that alcohol will be a fri/sat night thing only... and even then no extra-sugary drinks. Tonight I'll DD (Who would have ever thought, lol). It's cheaper that way, too.

  • Cauli Mash!

    So, in an attempt to eat better I have been trying out the IPD (Idiot Proof Diet) which is amazing, if for no other reason the tagline on the book says "or how we went from pig to twig!"

    And that is a low-carb, low sugar diet. And when I say low-carb I really mean no carbs at all if possible and minimal sugar. I've also started the Couch to 5K program and have been going to the gym every other day.

    Anyway, I tried Cauli Mash today (a pseudo mash potato thing made of cauliflower) and it was fantastic!! I'm liking this veggie, meat diet. It's healthy... I feel better... my skin is better (no sweets, no coffee, no tea, no soda) and I have more energy.

    But let me tell you, the first few days on the diet left me completely w/o energy!! I mean, I read how lots of girls felt that way. Today though I woke up and was just bursting. I went to the gym, I cooked breakfast... it was glorious. If for no other reason, this is what is making it worth it.

    Anyway, take one of the packages of steam-in-the-bag-cauliflower, steam it for seven minutes ( a few minutes longer than necessary), drain it VERY WELL, put in the food processor w/ half a tbsp of butter (or low-fat anything, although with the IPD "low-fat" isn't necessary) and bbbbbllllleeeeennnndddd. (Add a little double cream if it's too thick.) The recipe (and the pig 2 twig forum) say you can dress it up a zillion ways. I added a tiny bit of garlic powder and they are AMAZING.

    I would like to try it with fresh cauli, cause I think it'd be cheaper. Boil it till its very soft then drain it very well and go from there.

    I haven't had a bread-ish product since I started. A few fries. I bite of potato. But no real bread products. I am going to try oopsies (google it) and see how that goes.

    SO that being said, I'll keep you guys UTD on how things are going. I'm going to weigh on the 1st. I'm trying to judge the effectiveness of the diet not by the scales though, because weight shifts, etc. They say to use measurements or "Trousers of Truth" which I might give a shot. I really do feel better during the day though!

    In other news, summer is boiling away and the thunderstorms are great. Clay spent the last few days at home and despite my worries it is WONDERFUL to be home, listen to the rain and enjoy the apartment. I might look for a place downtown if it suits me for when my lease comes up to term.

    I have been at AKOM almost nine months, isn't that insane. I feel great that I have a part in such a wonderful non-profit, esp in this time where things are changing so much. Ground-floor footing... I love it!
