I am home early from work today. I am in the middle of working a 12 day straight work week and thought I'd take a half day today. I plan on doing some reading (Cormac McCarthy's The Road) and perhaps working in a nap.
I just made an excellent interpretation of Cha Cha Cha's Spinach Tofu burrito.
Ben's Spinach Tofu Burrito Delight:
2 tbsp Olive oil 1/2 cup chopped onion 4 cloves garlic 1 handfull fresh spinach or 1/2 cup cooked spinach 5 mushrooms 1/2 cup black beans 1/2 cup chopped tofu (Substitute chicken if preferred) salt and pepper to taste, chili flakes optional Chipotle hot sauce
Heat a frying pan on medium and add two table spoons of olive oil. I love garlic so I chopped four cloves and threw them into the pan and added half an onion chopped in thin slices. Next throw in the mushrooms and a handful of fresh spinach. Saute together and add salt and pepper to taste, I like it spicy so I threw in a large pinch of chili flakes too. After the spinach is wilted I added the black beans and tofu, both items are already cooked so you just need to let them heat through. All of the flavor are pretty mild, so this is where the chipotle hot sauce is a must.
