| | Lotta talk about Black Beans lately so decided to share one of my favorite recipes, Oklahoma Caviar. 1 can black beans, drained (or I've seen it made with black eyed peas too) 1 can whole kernel corn, drained 1 onion, finely chopped 1 green pepper, seeded and finely chopped 1 can rotel, mild or regular, drained 1/2 cucumber (peeled, seeded, and chopped) 1/2 bunch cilantro, chopped (I cut back on this some, half a bunch is too much in my opinion) Juice of three limes Salt to taste Set overnight in refrigerator to marinate. Serve with tostada chips. Short post today, no rain today, supposed to get up around 75 but windy. We do have a 50% chance or rain tomorrow and 30% chance on Friday. Weekend tho is supposed to be beautiful. Time to either garden, go to the shooting range, or go fishin' if we can get to our hole. Have a great rest of the week, everyone, enjoy this nice weather. |
