Cold Weather RecipesHere are a few family favorites. We will be having the soup for dinner tonight with the biscuits. I'm saving the dessert for Valentine's Day, though it is also good on any winter's night! MULLIGATAWNY SOUP 6c. Chicken broth (or more if you like your soup soupy) 2c. or so Cooked Chopped Chicken 1/8-1/4c. Chopped Onion 1/8c. Flour 1/2 heaping tsp. or more Curry Powder 1-2 Whole Cloves Salt and Pepper to taste 1/8-1/4c. Uncooked White Rice Sour Cream Combine the broth, onion, and rice in a pot and bring to a boil. Reduce heat and simmer for 15 minutes. Add chicken, curry powder, and cloves. Combine the flour with 1/8c. water and shake to combine. Bring soup to a boil and add the flour mixture. Boil for a few minutes while stirring to thicken the broth. Add salt and pepper and more curry to taste. Serve in individual bowls topping each with a dollop of sour cream. THE WORLD'S BEST EVER BISCUITS 2c. Flour 2tsp. Baking Powder 1/4tsp. Baking Soda 1/2tsp. Salt 1/2c. Cold Butter 3/4c. Buttermilk (or make with 1TBL Lemon Juice and enough Milk to make 3/4c.) 1/4c. Melted Butter Preheat oven to 450 degrees. Combine flour, baking powder, baking soda, and salt. Cut in cold butter with pastry cutter, knives, hands, food processor, or strong standing mixer until crumbly. Stir in buttermilk until just moistened. Knead mixture about 10 times. Roll or pat to 3/4" and cut into biscuits of desired shape. Place fairly close together in an ungreased baking pan or pans. Top generously with melted butter. Bake for 13-15 minutes or until middle biscuits are done. Serve with butter (I know, more butter?!), jam, and honey. For Cheddar Garlic Biscuits: Add 1c. Shredded Cheddar after cutting in the butter and before adding the buttermilk. Knead lightly just until all dough sticks together. Instead of cutting, pinch off chunks and pat into rounds that are about 1 1/2" to 2" across and 3/4" thick. Add 1/2tsp. Garlic Powder and 1/2tsp. Garlic Salt to melted butter. FUDGY BROWNIE PUDDING (Thank you to my mom's dear friend, PR, who shared the recipe with me at my wedding shower.) 3/4c. Flour 3/4c. Sugar 1 1/2tsp. Baking Powder 1/2tsp. Baking Soda 1/4tsp. Salt 1/3c. + 1/4c. Unsweetened Cocoa Powder 1/2c. Milk 1TBL Butter (melted) 1tsp. Vanilla 1/3c. Firmly Packed Brown Sugar 1 3/4c. Boiling Water Heat oven to 350 degrees. Coat 9" square baking pan with cooking spray. Combine flour, sugar, baking powder, baking soda, salt and 1/3c. cocoa powder in medium bowl. Combine milk, butter, and vanilla in measuring cup and stir into dry ingredients until just blended. Spoon batter into the prepared pan. Combine brown sugar, and 1/4c. cocoa powder in small bowl. Sprinkle evenly over top of the batter. Pour 1 3/4c. boiling water over all. ***DO NOT STIR!*** Bake 35 minutes or until cake tests done. Serve warm with sauce spooned on top. We like ours a la mode. Vanilla is a given, but think of trying strawberry or black cherry for Valentine's Day! |
