White Chili

Four cups of cooked chicken, diced or thickly shredded
About 40 ounces of Northern or Cannelli beans
One tablespoon of olive oil
Two medium chopped onions
Four cloves of garlic, minced
Eight ounces of green chiles, chopped (I use canned.)
Two teaspoons of cumin
One and one-half teaspoons of oregano
One-quarter teaspoon of cayenne pepper
Approximately six cups of chicken broth
Three cups of shredded Monterey Jack cheese
Sour cream (optional)

Saute onion in oil.  Add garlic.  Then, add the rest of the ingredients.  Simmer for 30 minutes.  Top with cheese and, if desired, sour cream.

Oh this is yummy. I'm going to make it when Ed is away this month (Chicago). Maybe I can get the girls to try it when he's not here to complain of the onion smell. He hates onions. Nutjob, he is.

i made this for dinner tonight, with just a couple of changes because of stupid things like, 'hey, i don't have any oregano!'. it was fantastic, and a big hit, and perfect comfort food for the cold winter night. thank you!!!

Last weekend it was just me and hubby, so I made a half portion of the White Chili.  Teenboy got a bite of the leftover and loved it as much as we did.  I bought everything to make a full portion this weekend, but I have a cold, can't taste and I'm not going to miss out on this yummy, so the boys will have to wait!

And, it's even better day 2!

I'm going to make this tomorrow . . I can't wait! I'm just going to tweak it a very tiny bit (hardly any actually) to make it a lower fat/lower calorie version. Not much needs doing though. thank you so much for sharing!

Hey, I came over here from your flickr, and the chili photo was the first I clicked on, so I guess that says something about how I think! This looks fabulous, and I am going to try it this week. I don't like regular chili - D. does. Maybe this can be the recipe that is the happy middleground!
