| | this recipe comes from the "beyond the moon" cookbook. the book is one of my favorites and i've checked it out from the library many times. i wish i had a copy. i changed the recipe a little bit, so i typed it out. i ate it for three days straight without getting bored of it. it's really simple to make but uses a lot of pans (especially if you make biscuits at the same time) so get ready to wash dishes.
indian spiced butternut squash soup (4 servings)
3 cups butternut squash, peeled and cubed (i used acorn squash and it was good) 3/8 cup red lentils 1 tbsp canola oil 1/2 cup onion, chopped 3 garlic cloves, peeled and minced 1/2 tsp salt turmeric black pepper whole cloves ground cardamon black mustard seeds cumin seeds nutmeg cayenne (or you can substitute all of these with 2 tsp curry powder if you want. biting the cumin seeds is the best part though) 1 1/2 tbsp lemon juice 1 medium tomato, diced 1 cup milk
cook the squash and lentils in 2 1/2 cups of water in a large soup pot until tender, about 20 minutes.
puree the squash, lentils, and cooking water in a food processor/blender. return to pot and set aside.
heat the oil in a skillet with medium heat. saute the onion and garlic until tender.
add sauteed vegetables to the soup pot. stir in the spices. i prepared the spices in a seperate container before pouring them in. i estimated what to put in and didn't measure or record what i used. the whole of it made about a tablespoon. add lemon juice.
heat soup to simmer. add the tomato and milk. simmer for 10 minutes more, stirring occasionally.

i have five more pictures on my film from apple picking over a week ago. maybe i'll put on my halloween mask again and take pictures since i haven't yet. i didn't take pictures of the zombie parade either! there are some really good photos here. i'm behind david in this one as we attacked two old men. i'm not in any others but a lot of my friends are. such good get-ups! here is another set. my zombie face is in the third picture, with david behind me this time. i wish i got a picture of my whole outfit. it was all half-cut-up dresses from my fabric pile. i think it turned out okay. |
